Chip, Owner and Head Distiller, was walking through the grocery store preparing for an evening of cooking and bought ingredients to make a dessert sauce. Later, while tasting the amazing sauce, he thought the only way it could be improved would be by distilling it!
…So we distilled it. Rumble is not a rum, although it has rum-like characteristics. It is considered a ”Spirit Specialty” because it is truly in it’s own category. We know of no other spirits produced from a mix of sugars, honey and fruit. As unique as it may be, drinkers will find plenty of familiar flavors in the glass. It has been confused for a single malt, aged mescal, and even a young cognac. The complex mix of aromas and flavors will continue to unfold in the glass as you drink.
Rumble is a product born from a little ingenuity and some of the finest local ingredients we could find. Our honey comes from Rudy’s Honey in Livingston, Texas and our Turbinado is supplied by Wholesome Sweeteners in Sugarland, Texas. Wholesome Sweeteners is an industry leader in the production of Fair Trade and Organic sugar products.
|At the Balcones Distillery in Waco, TX, proprietor and head distiller Chip Tate marries innovation with traditional distillation methods to create premium, artisanal spirits that pay homage to America’s whiskey tradition. His passion for handcrafted spirits is evidenced by his attention to detail. "By building our own condensers, wash stills, heat exchangers, hot liquor tank, etc. we were able to build exactly the equipment we wanted to use to make spirits. We became extremely familiar with the tools of our trade. The equipment itself is one more level of the distilling process that we get to craft with our own hands,” says Tate. After careful inspection and approval of every stage of the production process, Chip and his team hand-dip each bottle of Balcones with wax as a seal of their approval.
