A bright, pale yellow color in the glass with a light intensity of refreshing minerality, floral notes, green grass and green herbs. On the palate the wine is dry, light-bodied with refreshing mouth-watering acidity. The flavors are light intensity similar to the nose. The finish is clean with the refreshing minerality lingering for a long time.
Pascal Jolivet Sancerre Blanc is sourced from three vineyards in the heart of the appellation. The "Les Caillottes" vineyard and it's chalky soils makes up 50% of the blend, followed by the hillside vineyard of "Les Terres Blanches" at 30% and the limestone and flint riddled vineyard of "Silex" making up the remaining 20%.
Pascal Jolivet practices a minimalist winemaking style, allowing nature to take it's course. Each of his white wines is produced using exclusively native yeasts, and entirely in temperature stainless steel. All parcels are vinified separately until final blending and bottling.
Pascal Jolivet is a firm believer in natural winemaking, and practices environmentally friendly techniques in both the vineyard and the cellar. “I do a kind of biodynamic vinification that takes time, but results in wines you can drink and enjoy without fatigue. My wines have finesse, elegance, and purity, with clean aromas and flavors. There is a paradox in the winery, because I use technology, but only to control the fermentation, not to interfere. I make natural wines that are easy to drink, not ‘technical wines’ that are heavy and don’t go with food. I have a strong philosophy that our wine is a beverage meant to compliment food. We follow our own logical approach to respect the grapes and make Sauvignon Blanc wines that are lovely, fruity and vibrant.” – Pascal Jolivet
