Our 2003 Mirassou California Cabernet Sauvignon displays ripe blackberry and black currant flavors. These primary flavors are complimented with secondary flavors of vanilla, hints of spice, dark chocolate, black pepper, and elegant licorice and cocoa aromas. Our 2003 Mirassou California Cabernet Sauvignon is full bodied with a soft finish of moderate length. This wine is at its best if enjoyed within a year of release, but should be able to age in the bottle for up to three years.

Technical notes

Harvest Notes: The 2003 Mirassou California Cabernet Sauvignon was predominantly sourced from the Central Coast and Sonoma to give a combination of deep rich blackberry and black currant flavors. The varied climatic conditions of these regions, including the mountain ranges and cool marine influence, contribute to a diverse complexity of rich fruit flavors. Central Coast and Sonoma County Merlot was added to blend sophistication while enhancing softness. Fermentation temperatures were targeted at 85 degrees Fahrenheit for five to seven days to retain fruitiness and reduce harshness and tannins. The 2003 Mirassou California Cabernet Sauvignon was then barrel aged until the ideal balance of fruit and oak was reached. Oak barrels were primarily used for aging the blend to impart a soft toastiness and vanilla character while ensuring that the fruit characters remained prominent. The resulting Cabernet Sauvignon is full of varietal character featuring deep rich blackberry and black currant flavors with some chocolate and vanilla undertones and a hint of spices including clove and black pepper.
