Fruit spirits can be divided up into two categories: "Wässer" and "Geiste". The most well-known "Wässer" include Schwarzwälder Kirschwasser (cherry), plum, mirabell (small yellow plums) and pear (williams). It is important to know, that written by law, only cherry brandies being distilled and won from cherries in the Black Forest are entitled to be named "Schwarzwälder Kirschwasser". The most popular "Geist" is the fragrant and intensely-flavoured Himbeergeist (raspberry).
Obstwasser forms a category of its own. It is produced from a mash of apples and pears.
