The “Selection Belles Années,” is essentially a non-vintage version of Gimonnet’s “Cuvée Gastronome,”. Like the normal Gastronome, it has a petite mousse, so only 4.5 atmospheres of pressure instead of 5-6. The wine is just slightly less carbonated than a standard Champagne, which makes it more accessible after opening and a better partner for food (hence the name Gastronome).
