Made in the true Blanc de Noirs style, the grapes were picked, gently pressed and removed from skins early and the juice quickly extracted to accentuate the crisp fruit flavor and to assure a bright jeweled color. The wine then underwent arrested fermentation in cold stainless steel tanks to ensure fruit that held its acid.
